If it's for pure gaming, the Intel variant wins.
I'd advise going with 2x 16GB instead of 4x 8GB, especially on the Ryzen combination because Ryzens memory controller does not like having 4 slots filled.
The Ryzen combo is better if you're doing heavy rendering, 4K video editing, and such jobs - but in that case, an Ryzen Threadripper would be a better choice.

For #2, get higher frequency RAM
With #1, you can boost storage performance of the HDD by using Intel RST with the PCIe SSD as cache for the HDD and you can use the remaining as OS.
** Edit: didn't know it was a hybrid. Using RST will gain greater performance over the hybrid. So consider changing to an HDD WD Black @7200RPM for optimal performance

I think my only suggestion would be that in terms of upgrade paths (thinking about future) I would say go the AM4 path since AMD has said they will be using it for a number of years.
Whereas Intel always has new boards and sockets.
Maybe get some cablemod cables for the PSU to give it that extra flash
I like either build. Can't wait to see it finished
